If yours are like mine then you struggle to get healthy food into them. That is why as a mom passionate about wholesome family meals and self-sustaining cooking, I wanted to update this classic into a Veggie-Packed Meatloaf.

Tips to Making a Great Meatloaf
- Use high-fat meat. The fat will help keep the loaf moist.
- Sauté vegetables. Sautéing your veggies will help bring out their flavor and keep the meatloaf moist.
- Don’t overwork the meat. Overworking the meat will cause it to be dry and dense.
- After baking, let the meatloaf sit for at least 10 minutes with tin foil over it. Letting the meatloaf sit will help make cutting the loaf easier.
How To Make Meatloaf

- So you don’t have to wait for the oven, preheat the oven to 350 F degrees
- The next thing you will do is shred 1/2 cup of carrots. I use the smaller side of my cheese grater.
- Chop one onion and 1/2 cup of spinach.

- Place the shredded carrots, chopped onion, and spinach into a pan with three tablespoons of butter or olive oil.
- Next, cook until vegetables are soft. About 10 minutes

- Combine the quick oats, eggs, milk, garlic powder, and garlic salt. Mix until combined.
- Next, add the sauteed vegetables
- Then, fold the ground meat into the mixture. Remember, do not overwork the meat.

- Place the uncooked meatloaf mixture into a loaf pan.
- Cook for an hour and 10 minutes

- Combine pressed garlic, ketchup, honey, and soy sauce in a saucepan. Heat the sauce until the sauce is combined and warm.

- Once the meatloaf has finished cooking, place some of the sauce on the meatloaf until covered. Save the rest to put on individual slices.
- Let the meatloaf sit for 10 minutes.

Ingredients
Meatloaf
- 2 pounds ground beef
- 1 cup quick rolled oats
- 2 eggs
- 1/4 cup whipping cream
- 1/4 cup milk
- 1/2 cup shredded carrots
- 1/2 cup chopped spinach
- 1 chopped onion
- 1 teaspoon garlic powder
- 1 teaspoon garlic salt
- 3 tablespoon of Butter or Olive Oil for sauteing
Meatloaf Sauce
- 4 pressed garlic cloves or 1/2 teaspoon of garlic powder
- 1 cup ketchup
- 2/3 cup honey
- 3 Tablespoons soy sauce
Instructions
- Preheat oven to 350
- Shred the carrots, chop onions and spinach.
- Place the vegetables in a pan with 3 tablespoon of butter or olive oil and cook until soft. About 10 minutes
- Combine the quick oats, eggs, milk, garlic powder, and garlic salt. Mix until combined.
- Add the sauteed vegetables to the mixture.
- Now, add the ground beef to the mixture. Fold the meat into the mixture. Remember not to overwork the meat.
- Place the meatloaf mixture in a loaf pan and cook for an hour and 10 minutes or until the meatloaf center temperature reaches 160 degrees
- While the meatloaf is cooking, start the sauce.
- Place the pressed garlic, ketchup, honey, and soy sauce into a saucepan
- Heat the sauce until the sauce is combined and warm.
- Once the meatloaf has finished cooking, place some of the sauce on the meatloaf until covered. Save the rest to put on individual slices.
- Let the meatloaf sit for 10 minutes.
