Do you have a childhood meal that takes you right back? I can think of several, but one that stands out is meatloaf slathered in ketchup. As a kid, I couldn’t get enough ketchup! But, as I’ve grown, my taste buds have evolved. These days, I prefer dishes with more depth of flavor like garlic and honey.

Then one day, my mother-in-law gave me the Farmmade Cookbook, knowing how much I adore the farm life. Let me tell you—it was a total game-changer. If you’re into wholesome, farm-fresh meals, I can’t recommend it enough.

That’s where I came across a garlic and honey meatball recipe from Bluestone Ranch. It had the perfect balance of sweet and savory—absolutely mouthwatering. That recipe got me thinking… what if I took those flavors and turned them into a meatloaf? A cozy, flavorful, veggie-packed meatloaf the whole family could enjoy?

As a mom, I’m always on a mission to sneak more vegetables into our meals (without the kids catching on!). I know many of you can relate—it’s not always easy to get little ones excited about their greens. So I got creative and mixed the veggies right into the meatloaf. And guess what? It totally worked! Tips to Making a Great Meatloaf

  • Use high-fat meat. The fat will help keep the loaf moist.
  • Sauté vegetables. Sautéing your veggies will help bring out their flavor and keep the meatloaf moist.
  •  Don’t overwork the meat. Overworking the meat will cause it to be dry and dense.
  • After baking, let the meatloaf sit for at least 10 minutes with tin foil over it. Letting the meatloaf sit will help make cutting the loaf easier.

  • Ground Beef or another ground meat
  • Quick Rolled Oats
  • Eggs
  • Milk
  • Whipping Cream
  • Garlic Powder
  • Garlic Salt
  • Garlic Cloves
  • Ketchup
  • Honey
  • Soy Sauce
  • Carrots
  • Spinach
  • Onion

What You’ll Need

  • A Bread Pan or a Loaf Pan
  • Saucepan
  • Cheese Grater
  • Cutting Board
  • Knife
  • Mixing Bowl
  • Mixing Spoon
  • Measuring Cups & Spoons

How To Make Meatloaf

  • So you don’t have to wait for the oven, preheat the oven to 350 F degrees
  • The next thing you will do is shred 1/2 cup of carrots. I use the smaller side of my cheese grater.
  • Chop one onion and 1/2 cup of spinach.

  • Place the shredded carrots, chopped onion, and spinach into a pan with three tablespoons of butter or olive oil.
  •  Next, cook until vegetables are soft. About 10 minutes

  • Combine the quick oats, eggs, milk, garlic powder, and garlic salt. Mix until combined.
  •  Next, add the sauteed vegetables
  •  Then, fold the ground meat into the mixture. Remember, do not overwork the meat.

  • Place the uncooked meatloaf mixture into a loaf pan.
  • Cook for an hour and 10 minutes

  • Combine pressed garlic, ketchup, honey, and soy sauce in a saucepan. Heat the sauce until the sauce is combined and warm.

  • Once the meatloaf has finished cooking, place some of the sauce on the meatloaf until covered. Save the rest to put on individual slices.
  • Let the meatloaf sit for 10 minutes.

Ingredients

Meatloaf

  • 2 pounds ground beef
  • 1 cup quick rolled oats
  • 2 eggs
  • 1/4 cup whipping cream
  • 1/4 cup milk
  • 1/2 cup shredded carrots
  • 1/2 cup chopped spinach
  • 1 chopped onion
  • 1 teaspoon garlic powder
  • 1 teaspoon garlic salt
  • 3 tablespoon of Butter or Olive Oil for sauteing

Meatloaf Sauce

  • 4 pressed garlic cloves or 1/2 teaspoon of garlic powder
  • 1 cup ketchup
  • 2/3 cup honey
  • 3 Tablespoons soy sauce

Instructions

    1. Preheat oven to 350
    2. Shred the carrots, chop onions and spinach.
    3. Place the vegetables in a pan with 3 tablespoon of butter or olive oil and cook until soft. About 10 minutes
    4. Combine the quick oats, eggs, milk, garlic powder, and garlic salt. Mix until combined.
    5. Add the sauteed vegetables to the mixture.
    6. Now, add the ground beef to the mixture. Fold the meat into the mixture. Remember not to overwork the meat.
    7. Place the meatloaf mixture in a loaf pan and cook for an hour and 10 minutes or until the meatloaf center temperature reaches 160 degrees
    8. While the meatloaf is cooking, start the sauce.
    9. Place the pressed garlic, ketchup, honey, and soy sauce into a saucepan
    10. Heat the sauce until the sauce is combined and warm.
    11. Once the meatloaf has finished cooking, place some of the sauce on the meatloaf until covered. Save the rest to put on individual slices.
    12. Let the meatloaf sit for 10 minutes.
    13. ENJOY!
